Cibes Salatası — İzmir Cabbage-Shoot Meze
Cibes is the tender shoot that grows after cabbage or cauliflower is harvested. In İzmir, it becomes a simple, prized ot meze.

INGREDIENTS
• 700 g cibes greens, or tender young cabbage and cauliflower leaves
• 2 garlic cloves, crushed
• Juice of 1 large lemon
• 60 ml extra-virgin olive oil
• Salt to taste
METHOD
1. Wash the greens carefully and trim only tough ends.
2. Drop into generously boiling water and cook 6–8 minutes, just until the stems are tender. Do not overcook.
3. Drain well and let cool; keep the leaves and stems in recognizable pieces.
4. Whisk garlic, lemon, olive oil, and salt. Spoon over the greens and rest 15 minutes before serving.
AUTHENTICITY NOTE
Cibes is especially associated with İzmir’s herb markets. The dressing should support its mild cabbage sweetness rather than cover it with yogurt or heavy seasoning.
