Döner Kebab — Home-Style Turkish Beef Döner
Döner means “turning”: thin layers of seasoned meat roast on a vertical spit and are shaved as they brown. This home method freezes a compact meat roll and slices it paper-thin for a hot skillet.
SERVES 4–6 | PREP 30 MIN + CHILLING | COOK 20 MIN
INGREDIENTS
• 700 g beef sirloin or rib-eye, very thinly sliced
• 200 g medium-fat minced lamb or beef
• 3 tbsp plain yogurt
• 2 tbsp olive oil
• 1 tsp sweet paprika
• ½ tsp each black pepper, cumin, and dried thyme
• 1½ tsp salt
• Butter or beef fat, for the pan
METHOD
1. Mix yogurt, oil, seasonings, and salt. Coat the sliced meat.
2. On parchment, alternate flattened minced meat with sliced beef to form a tight log. Roll firmly and freeze 4 hours or overnight.
3. Let stand 10 minutes, then slice across the log as thinly as possible.
4. Heat a wide cast-iron pan until very hot. Cook in small batches with a little butter or beef fat, letting the edges brown.
5. Serve immediately in pide or lavash with tomato, onion, parsley, and yogurt—or over rice.
AUTHENTICITY NOTE
A vertical spit produces the true restaurant texture. This method preserves döner’s defining layered meat and freshly browned edges without pretending to duplicate the machine.
