Kıymalı Kol Böreği — Coiled Minced-Beef Börek

Long rolls of yufka filled with savory minced beef are arranged in a coil and baked until crisp outside and tender between the layers.

Serves 8 | Prep 35 minutes | Cook 45 minutes

INGREDIENTS

• 5 large yufka sheets

• 500 g minced beef

• 2 onions, finely chopped

• 1 green pepper, diced

• 2 tbsp olive oil

• 1 tsp pul biber

• Salt and black pepper

• 200 g yogurt

• 2 eggs

• 100 ml oil

• Sesame and nigella seeds

METHOD

1. Brown beef in olive oil. Add onions and pepper; cook until dry and tender. Season and cool completely.

2. Whisk yogurt, eggs and oil for the wash.

3. Lay out one yufka, brush lightly with wash and cut in half. Spread filling along the long edge and roll into a loose rope.

4. Coil the first rope in the center of an oiled round tray. Continue wrapping filled ropes around it.

5. Brush with remaining wash and scatter sesame and nigella seeds.

6. Bake at 190°C / 375°F for 35–45 minutes until deeply golden. Rest 10 minutes before cutting.

COOK’S NOTE

Cooling the filling and keeping the rolls loose preserves distinct, flaky layers.
