Lüfer Izgara — Charcoal-Grilled Bluefish

Lüfer is one of Istanbul’s most celebrated seasonal fish. Grilling keeps the preparation simple so its rich, clean flavor remains the focus.

Serves 4 | Prep 15 minutes | Cook 12 minutes

INGREDIENTS

• 4 small whole bluefish, cleaned, or 2 large butterflied bluefish

• 2 tbsp olive oil

• Salt

• 1 red onion, thinly sliced

• 1 tsp sumac

• Rocket leaves and lemon wedges

METHOD

1. Pat the fish dry. Make two shallow cuts in each side, then rub with olive oil and salt.

2. Heat a charcoal grill or ridged pan until very hot. Oil the grate.

3. Grill the fish for 4–6 minutes per side, depending on thickness, until the skin is crisp and the flesh just separates from the bone.

4. Toss the onion with sumac. Serve the fish immediately with sumac onion, rocket, and lemon.

AUTHENTICITY NOTE

In Istanbul, lüfer is treated with restraint—often only salt, fire, onion, and lemon. Its season and size matter; use the freshest sustainably sourced bluefish available and do not bury it under heavy marinades.
