Pişi — Turkish Fried Breakfast Dough

Pişi is a light, golden fried dough served at Turkish breakfast tables with white cheese, olives, tomatoes, honey, or jam. A good pişi puffs in the oil and stays airy rather than heavy.

MAKES 10–12 | PREP 20 MIN + RISING | COOK 20 MIN

INGREDIENTS

• 500 g all-purpose flour

• 7 g instant yeast

• 1 tsp sugar

• 1½ tsp salt

• 300–325 ml lukewarm water

• 1 tbsp yogurt, optional

• Neutral oil, for frying

METHOD

1. Mix the flour, yeast, sugar, and salt. Add the water and yogurt; knead until soft and smooth, about 8 minutes.

2. Cover and let rise until doubled, 60–75 minutes.

3. Divide into 10–12 pieces. Shape into rounds, flatten gently, and make a small opening in the center if desired.

4. Heat 4–5 cm of oil to about 175°C / 350°F.

5. Fry in batches, turning once, until puffed and evenly golden, 2–3 minutes per side.

6. Drain and serve warm.

KITCHEN NOTE

Keep the dough soft and avoid adding too much flour. Oil that is too cool makes pişi greasy.
