Yayla Çorbası — Turkish Yogurt and Rice Soup

Yayla çorbası is a gently tangy yogurt soup with rice, finished with butter, dried mint, and red pepper.

SERVES 6 | PREP 10 MINUTES | COOK 35 MINUTES

INGREDIENTS

• 1/2 cup rice

• 6 cups water or light stock

• 2 cups plain full-fat yogurt

• 1 egg yolk

• 2 tablespoons flour

• 2 tablespoons butter

• 1 tablespoon dried mint

• Pul biber and salt

METHOD

1. Simmer the rice in 5 cups water until very tender.

2. Whisk yogurt, egg yolk, flour, and the remaining cool water until smooth.

3. Temper the yogurt mixture with several ladles of hot broth.

4. Pour it slowly into the pot while whisking.

5. Cook gently for 8–10 minutes without a hard boil.

6. Melt butter with mint and pul biber; spoon over the soup.

7. Season and serve warm.

COOK'S NOTE

Tempering and gentle heat prevent the yogurt from curdling.
