A familiar Turkish home-style drink of dried mint and fresh lemon, gently simmered and strained into warm cups.

Serves 2 • Prep 3 minutes • Cook 6–7 minutes

INGREDIENTS

• 500 ml water

• 2 teaspoons dried mint

• 1 small lemon, washed

• Honey or sugar to taste, optional

METHOD

1. Cut half the lemon into small pieces; reserve the other half for serving. Remove the seeds.

2. Put the water, mint and chopped lemon in a small saucepan.

3. Bring to a gentle simmer and cook over low heat for 6–7 minutes.

4. Strain through a fine sieve into two cups. Taste before adding sweetener or a squeeze from the reserved lemon.

SERVING

Serve warm. For less bitterness, peel the lemon before simmering. Fresh mint can replace dried mint, though its flavour is gentler.
