Tahin Pekmez — Tahini and Grape Molasses

Tahin pekmez is a much-loved Turkish breakfast pairing: nutty sesame paste stirred with concentrated grape molasses until marbled and creamy. It needs no cooking.

Serves 4 | Prep 5 minutes

INGREDIENTS

• 200 g tahini

• 100–130 g grape pekmez, to taste

• Fresh Turkish bread, simit or pide, to serve

• Walnuts or sesame seeds, optional

METHOD

1. Stir the tahini well in its jar so the oil is fully incorporated.

2. Spoon it into a shallow bowl.

3. Pour the pekmez over the tahini and swirl lightly for a marbled appearance, or mix completely for a uniform sauce.

4. Serve immediately with torn fresh bread.

CULTURAL NOTE

Families adjust the balance to taste; roughly two parts tahini to one part pekmez is a useful starting point. Grape pekmez is classic, though mulberry and carob versions are also enjoyed. The combination is rich, so a small serving goes a long way.
