Zahter Çayı — Hatay-Style Wild Thyme Tea

A clear, intensely herbal infusion associated with Hatay and southeastern tables. Brief steeping keeps zahter fragrant rather than bitter.

Serves 2 • Prep 2 minutes • Steep 3–5 minutes

INGREDIENTS

• 500 ml water

• 2 teaspoons dried food-grade zahter herb sold for tea

• Lemon wedges, optional

METHOD

1. Bring the water to a boil and remove from the heat.

2. Place the zahter in a small teapot. Add the hot water and cover.

3. Infuse for 3 minutes, then taste. Allow up to 2 minutes more if desired.

4. Strain promptly and pour into small glasses. Add lemon only if you like.

SERVING

Serve after a meal. Use the leafy herb, not the sesame-and-spice breakfast mixture also sold as zahter.
